3 easy no-bake holiday treats
Want to spend less time tending to the oven, and more time relaxing by the fireplace this holiday season?
Say seasons greetings to these sweet holiday treats, all of which can be whipped up just as fast as Santa can say “On Dancer, On Prancer!”
From chocolate-covered fruit to popular candy barks, here are a few no-bake holiday treats that can be shared at treat exchanges, holiday parties or left out for Santa.
Peppermint Bark:
Peppermint bark is a holiday favorite, combining white chocolate and peppermint pieces for Christmas-time candybars. We love to make this recipe (courtesy of Nestle!) and have the bark on hand to place in gift baskets or wrap and attach to gifts.
Line a baking sheet with wax paper. Crush your peppermint candies in a heavy duty bag. In a microwave-safe bowl, microwave white chocolate morsels on medium high power for a minute. Stir. Repeat in 10-to-15-second intervals, stirring until the morsels are entirely melted. Use a strainer to pour the crushed candy over the melted morsels, reserving the larger pieces of peppermint. Stir the morsel-peppermint mixture. Spread the mixture on a baking sheet. Sprinkle the larger peppermint pieces and press them lightly into the candy spread. Let stand for about one hour. Rocky Road Bars:
Baby, it’s cold outside. If you’re tastebuds are craving Rocky Road ice cream, but the temperatures are nudging you more toward hot chocolate — get the best of both worlds with this marshmallow, nutty treat.
You’ll need three cups of semisweet chocolate. In a microwave-safe bowl, melt three quarters of the chocolate on medium-high, taking it out of the microwave every 30 seconds to stir. Mix in 1 tablespoon of shortening to make the chocolate smooth. Line a baking sheet with parchment paper and spread the melted chocolate on the sheet. Sprinkle with chopped-up peanuts and marshmallows. Let cool and then break apart.

Clementines really sweeten up this time of year. (And, for many families, a clementine in the toe of your stocking on Christmas morning is a traditional treat. Some historians trace it back to the Great Depression when clementines were considered an indulgence).
For a flavorful treat, peel two clementines and then pull apart the sections of the fruit. Melt four ounces of candy chocolate in a microwave-safe bowl, stirring every 30 seconds, and then dip the fruit half way in crushed pistachios. Let cool.
Other dipping ideas for the candied clementines? Slivered almonds or macadamia nuts and shredded coconut for a tropical twist.
