7 cocktails perfect for the summer solstice

There’s nothing better than a fresh cocktail paired with the perfect summer evening. And although the weather may suggest that summer has already arrived, the first day of summer is actually June 21. So, in honor of the official start of our favorite season, let’s raise a glass to the warm days ahead. Here are six delicious cocktail recipes inspired by our favorite summer fruits that we can’t wait to taste. Cheers!
Summer fruit: Watermelon
Cocktail creation: No other fruit screams summertime like watermelon and no other libation is more satisfying on hot day than a margarita, so what could be better than the marriage of the two? That’s right – a Frozen Watermelon Margarita. This irresistible fusion was created by Jenny Steffens Hobick, the woman behind the blog Everyday Occasions, and we can’t wait to pour a glass. With just five ingredients and a blender, this sweet and savory cocktail will have your party guests swooning for a sip.
Summer fruit: Blackberry
Cocktail creation: We love classic summer flavors, so when we came across this Blackberry Cream Soda cocktail by Laura, of the blog Tide and Thyme, we knew it would be on our must-try list. Who knew three ingredients can turn into a cream soda taste? The added tartness of blackberries creates an exotic color with a delicious taste. We think this cocktail would be lovely on a hot summer night under the stars.
Summer fruit: Strawberry
Cocktail creation: We can’t think of a more adorable way to ring in the summer solstice than with this clever Popsicle cocktail recipe by Ashley from the blog Sugar & Cloth. Upside down strawberry lemonade Popsicle melting into fizzy spirits – uh, yum! This Popsicle potion is the most scrumptious and slushiest way to cool off with friends at a backyard barbeque this summer. This whiskey drink is the perfect blend of sweet and tart and encompasses all the traits we love about rhubarb. So, if you’ve got an extra stock or two in your garden after you’ve made your pie, try this tantalizing cocktail.
Summer fruit: Raspberry
Cocktail creation: Sometimes an ice cold Corona with lime can be the most refreshing summer brew. But how about adding in a few other ingredients to make the perfect raspberry cocktail? Yes please! Mai, of A Cup of Mai blog, created this Raspberry Beer Cocktail that mixes Corona, vodka and raspberries. This bubbly brew, in all its pink glory, would be ideal for a girl’s night. Cocktail creation: This adult beverage has a high-end look with only two ingredients. A glass of bubbly paired with a tropical summer flavor – this cocktail has our mouths watering. Liren Baker of the blog Kitchen Confidante says these Sparkling Mango Sorbet Floats are the “antidote to a blazing hot day” and we couldn’t agree more. With a color that parallels the hues of summer, we can’t wait to scoop ourselves a glass to chill out in the coming months.

Cocktail creation: A juicy peach is one of the most iconic summer fruits. Sweet and sometimes tart, this versatile fruit makes the perfect addition to a cocktail.
