When the kids are staging a protest over January dinners that include ingredients like kale and quinoa, it’s tempting to give in and reach for a frozen pizza or package of hot dogs.
Resist the temptation: It’s possible to keep them happy and healthy with delicious and easy-to-make meals.

Pizza bagels:
Half two bagels, toast them in the oven and spread an eighth cup of marinara over the four slices. Top each half with a quarter cup each of shredded rotisserie chicken and low-fat shredded mozzarella. Broil for 2 minutes, until the cheese melts. And here’s a helpful hint: If you still insist on getting those greens in, you can slip a bit of chopped spinach under the cheese, and they’ll likely never be the wiser.

Wagon wheel soup:
Pick a pasta in a fun shape, like wagon wheels, and you’re sure to entice those picky eaters. Begin by boiling 9 ounces of pasta. While the pasta cooks, combine a half pound of ground beef with a half a chopped onion, a tablespoon minced garlic, a teaspoon dry oregano and a pinch of salt in a skillet. Stir until browned and add a 14.5 ounce can diced tomatoes. Bring to a boil and cook, stirring for a minute, then reduce heat to medium and cook for three minutes. Serve over pasta and top with ¼ cup shaved Parmesan and sprinkle of fresh parsley.

Waffle sandwich:
Nothing pleases a kid more than a favorite breakfast food making an appearance at dinner.
Start by cooking four slices of bacon until they’re crisp.
Combine 3 tablespoons of mayonnaise with a tablespoon low-fat buttermilk, a teaspoon cider vinegar, and a quarter teaspoon each of sugar and black pepper in a small bowl. Toast eight frozen waffles and spread mayo mixture over four of them. Divide 6 ounces thinly sliced turkey luncheon meat, 8 slices tomatoes, lettuce leaves and bacon over the four waffles and top with remaining waffles.
